The Opportunity

The University of the South Pacific (USP) is seeking a Facilitator, Commercial Cookery to join our Nadi Centre. Under the direction of the Head of the College of Continuing Vocational Education and Training (CVET), the Facilitator will be responsible for leading the development and implementation of all processes related to the delivery of the commercial cookery programme. This includes the planning and development of training content, recipe cards, and session plans, as well as the delivery of training sessions. The Facilitator will also provide student counselling, coordinate supplier selection, manage inventory acquisition and control, and ensure the security and proper management of all training equipment and resources within the facility.

The successful candidate must have a working knowledge of Moodle and other ICT tools used in higher education, experience with diverse modes of delivery, and excellent oral and written communication skills in English.

The appointee will be responsible to:

  • Deliver cookery courses through face-to-face and blended modes, ensuring timely preparation of learning materials, session plans, continuous updating of MOODLE content, delivery of service at the Pacific Fusion training kitchen and preparation of students for skills competition events.
  • Conduct and manage student assessments, maintain accurate records, provide feedback to students, submit final grades, and provide timely feedback in line with programme standards.
  • Ensure all assessment processes align with programme standards and are submitted for review by the Board of Assessment.
  • Provide regular consultation sessions to support student learning and address academic concerns.
  • Collaborate with Pacific TAFE staff and represent the Cookery and Hospitality programme in external meetings.
  • Maintain professional relationships with internal and external stakeholders to support programme delivery and development.
  • Contribute to the internal and external marketing of all Pacific TAFE programmes and industry visits.
  • Support the delivery of cohort-based and short training programmes.
  • Assist in increasing programme enrolments through active participation in marketing and stakeholder engagement initiatives.

The Person we Seek

To be considered for this position, applicants must have:

  • Completed Diploma of Culinary Arts and Management and/or have equivalent qualifications with 6 years relevant experiences at Chef de Partie level in a 4-star resort/ hotel kitchen and/or;
  • Trade Certificate in Commercial Cookery and/or have equivalent qualification with 5 years’ experience at Sous Chef level in a 4 star resort/ hotel kitchen;
  • Direct hands-on supervisory/team leadership experience in a commercial kitchen environment;
  • Strong skills in - A la carte, Buffet & Banquet /Events Service, Hot kitchen, Garde Manger and Butcher;
  • Strong experience in Food safety & hygiene; Menu planning, Use of seasonal local produce, Pacific Rim Cuisine and International Cuisine;
  • Excellent communication skills with a high level of proficiency in the English language;
  • Advanced proficiency in computer applications, including Microsoft Office Suite;
  • Proven experience in the delivery and assessment of competency-based skills training.

The position is available for a term of three years and may be renewed by mutual agreement.

Salary Range

  • FJ $34,546.23 to FJ $40,858.60 per annum.
